The harvest is a delicate affair. At sunrise, each blossom is hand-picked and carefully placed in a fabric sack to prevent bruising. Once gathered, the bags are quickly transported to the distillery, where they are spread onto a cool concrete floor to concentrate the oils briefly before distillation.
The roses are placed in the still as a stream of low-pressure steam is discharged. The essential oil is released into the vapor and condensed by cooling the coil, before the oil is separated from the hydrosol, a natural byproduct of distillation. The resulting oil is one of the most expensive in the world, with more than 10,000 blossoms required to produce just 1/6 ounce of precious rose oil.
